UPDATE: Sister Rose Bartnicki, an 87-year-old nun from the School Sisters of St. Francis, has just hosted a live demonstration on her cherished method for making traditional Polish cookies, known as kolaczki, at St. Ignatius Loyola Parish in Spring Township.
This event drew enthusiastic participants eager to learn the art of crafting these flaky pastries, especially popular during the holiday season. Sister Bartnicki’s kolaczki have been a beloved staple among parishioners, inciting both admiration and curiosity among those who share her Polish roots.
The sessions, held recently, allowed Sister Bartnicki to share her time-tested recipe, which eschews leavening agents like baking powder or baking soda. “It takes time and patience,” she emphasized, noting that the key to success lies in the dough’s preparation. It must be rolled to less than one-quarter inch thickness, ideally closer to one-eighth inch. Many participants had previously attempted making kolaczki using other recipes, with varying results.
Sister Bartnicki’s passion for these pastries stems from her upbringing in Shenandoah, where kolaczki were a fundamental part of holiday celebrations from Thanksgiving through Easter. Participants were thrilled to learn that the dough can be prepared ahead of time and frozen for convenience.
“Both groups really enjoyed it,” Sister Bartnicki shared. “They had a marvelous time,”

The nun’s meticulous approach includes using a specialized cookie cutter for precise dough strips and ensuring a dab of cream cheese or other fillings is added before folding. “When you use a pizza cutter, that doesn’t work out,” she advised, underscoring the importance of the right tools for this delicate pastry.
